Farfalle with salmon and asparagus

Piatto di farfalle al salmone e asparagi

Ingredients for 4 people:

400g farfalle
300g salmon
1 bunch of asparagus
1 shallot
extra virgin olive oil


Chop the shallot and brown it in a pan with a little oil, add the cleaned and cut asparagus, when cooked add the salmon cut into pieces and continue cooking for around one minute, add salt. Cook the farfalle in salted boiling water, drain and dress with the salmon and asparagus seasoning, add a little oil if necessary and a sprinkling of chopped parsley.
