Piatto di pappardelle con puntarelle al curry e salsiccia nostrana

Ingredients for 3 people:

250 g La Pasta di Camerino Pappardelle
1 head of puntarelle (a.k.a asparagus chicory)
2 sausages
2 cloves of garlic
curry powder to taste
chilli powder to taste
Extra virgin olive oil to taste
sale to taste


Clean the puntarelle, using a knife to remove the tough white part. Parboil in salted water for around ten minutes and drain. Sauté the greens in the pan with the oil and due cloves of garlic, adding a sprinkle of curry powder and lastly a pinch of chilli powder. Cook the pappardelle in plenty of boiling water for 6/7 minutes and in the meantime, removing the skin from the sausage, cut it in to large pieces and add to the puntarelle. Drain the pasta leaving aside a little of the water that will be used to blend the pasta with the dressing.
